CAESAR TURKEY BURGERS

Fact: Look for turkey-breast mince rather than thigh mince, as it’s even lower in fat and calories!


INGREDIENTS: 1 garlic clove, crushed, 1 anchovy fillet in olive oil, drained and diced, juice of 1 lemon, small bunch parsley, finely chopped, 3 tablespoons grated Parmesan, 3 tablespoons low-fat Greek yogurt, 500 grams pack lean turkey mince, 1 onion, finely chopped, 1 romaine lettuce, shredded, 4 small wholemeal buns, 2 tomatoes, sliced.


1 Heat oven to 200/180 degrees Celcius fan oven or gas mark 6. Mix together the garlic, anchovy, lemon juice, two-thirds of the Parmesan, and the parsley. Put half in a small bowl, mix with the yogurt, and set aside. Mix the other half ina. large bowl with the mince and onion, then season. Shape into four burgers and put in a roasting tin, then cook for 15-20 minutes, until cooked through.

2 Meanwhile, toss the lettuce with the yogurt dressing and slice the buns.

3 To assemble, put the burgers in the buns with some salad and a few tomato slices. Serve the burgers with any leftover salad sprinkled with the reserved Parmesan.
